Sweet Dogfish Recipe
This dulce de leche reminds us of childhood sweets. Depending on the region of the country, it will be known by other names, such as sour milk caramel, sour milk caramel...
In the region of Mato Grosso do Sul, this delicacy is known as sweet cachorrada and it is a sweet made with milk, sugar, cloves and cinnamon (which can be optional), cooked over the fire until it becomes a jam! It is wonderful!

Ingredients for making sweet Cachorrada:
1 liter of milk
1 cup of crystal sugar
1 lemon (to curdle the milk)
5 cloves (optional)
1 cinnamon stick (optional)
How to make sweet dog:
In a large saucepan, add the liquid milk and add the lemon juice. Let the milk curdle for approximately 15 minutes, with the heat off.
Tip: If you want, double the recipe to prepare a larger amount of candy.
Add sugar, cloves and cinnamon. Simmer over medium heat until boiling, so the milk picks up the taste of these spices.
Lower the heat and stir from time to time. It will release the whey, but as it cooks, the syrup will thicken.
Keep stirring occasionally until the candy changes color. It will have a darker color and a thicker syrup. Turn off the heat and serve the candy in a compot.
Tip: The time to reach the sweet spot can vary from 30 to 40 minutes.
